ModernGear Food: Banana Chocolate Chip Muffins

I'm not exactly sure where this recipe comes from - either my sister Tanya or my Mom....but these are my favourite muffins, ever. They're a perfect combo of banana and chocolate, and they're a perfect (and real) excuse for not throwing away bananas when they start to turn brown. The browner, the better! (I say, "and real" because when we've got a bunch of bananas getting soft and my husband asks me if I am going to do something with them, I always say, "Yes! Bake muffins", and he always says, "Riiiight." So, sometimes I bake muffins, but not always. Sometimes the bananas just spoil.) Don't let that happen - these muffins are just too good...and I hear that bananas won't always be around to enjoy!

Fresh out of the oven they're delicious, but there's something even better about these muffins the next morning. The chocolate chips are better in some way...I swear. I am not doing it justice, but see if you know what I mean.

Hint - make more! I love these muffins so much that I always double my recipe...

INGREDIENTS
1 3/4 cups flour
1/2 cup granulated sugar
3 tsp baking powder
1/2 tsp salt
1/2 cup chocolate chips
1 egg
1/4 cup cooking oil
1/4 cup milk
3 mashed bananas

DIRECTIONS
1. Measure first 5 dry ingredients into large bowl. Mix thoroughly and make a well in the centre.
2. Realize you've run out of baking powder and hop on your bike to get some.
3. Come home. Mash bananas.
4. Beat egg until frothy. Mix in oil, milk and bananas.
Pour into well. Stir only to moisten. Batter will be lumpy.
4. Fill greased muffin tins 3/4 full.
5. Bake at 400 degrees for 20-25 minutes.
6. Enjoy!

i'm also looking for banana bread recipe. there's a bunch online, but if you have their 'special' recipe, i'd be happy to use that :D

I make the world's WORST muffins, but may have to try your recipe - they look yummy!!

also, forgot to mention that I made your quinoa tabouleh and it was a hit

I baked these and they are SO GOOD!!! You're right, better on the second day. Now I know what to do with my brown bananas.
